Coffee beans for preparing turkish coffee

Typically Arabica beans are used which are light- to medium-roasted (see Roast levels )

The origins of the beans can vary, but in our experience especially beans from Brazil are most common for this kind of coffee preparation.

Grind level for turkish coffee

The beans have to ground to the finest possible degree - powder or dust like. Please be aware, that not every coffee grinder is able to reach such a fine grind level.

Taste characteristics of turkish coffee

Since Turkish coffee is almost always flavored with sugar and spices, a generalization in terms of taste is very difficult.

In any case, Turkish coffee / mocha is characterized by its intense flavor. The first sip may taste pleasantly bitter until the Sugar and spice flavors become noticeable on your palate.

Turkish coffee retains much of the flavor of the beans that you use.

Unlike many other coffee preparation methods, Turkish coffee is not enjoyed "to the last drop" - up to 1/3 of the cup is filled with ground coffee and remains on the ground of the cup.

The art of brewing turkish coffee

With Selamlique we have expanded our coffee assortment to include one of the oldest forms of coffee enjoyment: turkish coffee. Here is a brief introduction to the art of brewing Turkish coffee:

Turkish coffee (depending on the region or special preparation also called "Arabic coffee", "Greek coffee", "Egyptian Coffee", etc ... ) actually refers to a method of preparation and not a special type of coffee blend.

The turkish mokka pot - Ibrik - Cezve

The coffee is brewed in a coffeepot called Ibrik (Turkish, derived from the Arabic - actually refers generally to a pot for liquids with a long spout) or Cezve (Turkish, derived from the Arabic "burning wood / coal", variations of "Cezve" are also used in Russian, Ukrainian and other languages).

How to brew turkish coffee

There are many variants for the preparation. What all of them have in common: the coffee is brewed in hot (not boiling) water - slowly heated up so that the flavor can fully develop.

Coffee & Water quantity

The amount of water is measured in cups with about 7g of coffee per cup (one to two teaspoons or a bag Selamlique).

Usually, your first add water, then sugar and coffee is poured into the jug.

Then stir the water, coffee and sugar until the sugar has been dissolved.

Now the coffee pot (also: Ibrik or Cezve) is heated over a low flame.

Brewing and heating turkish coffee

Caution: when using excessive heat the coffee boils too quickly and the flavors have no time to unfold. Never stir while brewing, as this would resolve the resulting froth!

Now comes the most exciting moment: when the coffee starts to boil, the kettle is removed from the stove before it boils over.

Let it cool and watch the froth settle down - the residual heat of the stove is still working now on.

Now repeat this process one to two times. Make sure that the froth does not boil over!

The perfect pouring

Crowning the brewing process is to achieve a preferably thick layer of coffee froth both in the pot and transfer it into the cup.

One way to achieve this is to lift the coffee pot slightly upward when pouring the coffee in the cup. 

Regardless of how you pour the coffee, the cup with the thickest froth is viewed always viewed as the most preferable one!

A well prepared Turkish coffee is characterized by its thick coffee foam, its homogeneous consistency and the lack of coffee particles in the liquid.

Another possibility preparing turkish coffee (see picture) is to wait a short time (approx. 20Sekunden) between boiling to extract a little more flavor.

However, in this case, the froth will be lost completely. Therefore, the froth is poured in advance poured into the cup (s) and the remaining coffee is boiled again.
In this case it is very important to ensure that only the foam is poured into the cup but not the coffee particles .

Serve and enjoy

It is usually served with a glass of cold water to refresh the palate before drinking coffee again.

These are just two examples for the many methods of preparing turkish coffee, which have evolved over the centuries.

These should serve as a first guide to this fascinating world of coffee. The coffee is best enjoyed hot and is usually served with a glass of cold water to refresh the palate before enjoying the first sip.

He is typically served with Turkish sugar and can be flavored with spices (such as cinnamon, mastic, cardamom).

Although the entire coffee is poured into the cup not everything is consumed - the coffee grounds are left behind on the bottom of the cup.

It is with these coffee grounds that the future is told: the cup is put upside down on the saucer, allowed to cool and on the basis of the emerging patterns your future can now be determined ... ;-)
